Last night for dinner I made up a quick stir fry. We’re going out of town this weekend, and plans fell through last night with both of us (hubs was supposed to meet some old coworkers and I was supposed to meet up with my gal pal M from CT who was in town) so I threw together a quick stir fry using a new sauce that hubs’ fam recommended to us.

1 bag of pre-cooked brown rice (trader joe’s)
3 c. frozen broccoli florets
2 packages of pre-baked savory tofu
2 eggs whipped then thrown into the mix to cook over stirfry

Now I should preface that I didn’t measure things out how I usually do. I know that a bag of the frozen rice is about 3 servings. Somehow I managed to get out about 4 servings out of this meal. I figure each serving which I measured to be about 1-1.5 c is about 9 points+ but I’m not really that good at measuring and hubs likes to just dump tons of soy sauce into the dish. So there’s really no way to know but if you want to be more precise? This is an amazing dish.
I’m not quite a food blogger yet – I’m working my way up there (with my little iphone camera because I <3 instagram and am often too lazy to upload pictures from my actual camera), but I’m going to stick to dinners (mostly because my other meals are pretty boring – generally left overs for lunch and cereal for breakfast. I’m a creature of habit and know what I like. What can I say?) But I’ll start with dinners and just posting more pictures in general. I dunno. I need somethin’ more to spruce up the blog. It’s feeling kind of m’eh as of late.
