Recipe Alert: Oriental Cole Slaw

So last trip up north, hubs family introduced to us to one of my new favorite recipes.

Oriental Cole Slaw (Broccoli Slaw)


Ingredients

1 pgk of broccoli slaw- (sliced broccoli with sliced carrots-comes in a package near the lettuce)
Onions or green onion chopped (optional)
¼ cup butter
2pkgs of oriental ramen noodles (crushed) –hold season packets out for dressing
½ cup slivered almonds
2 TB sesame seeds

Directions

In a fry pan, mix ¼ cup melted butter, brown crushed ramen noodles, almonds, and sesame seeds . Mix quickly so as
not to burn.
Mix the broccoli slaw and onion together, add the browned ramen, almonds, sesame seeds.
Just before serving add the dressing.

Dressing

For the Sauce: Mix…
½ cup oil ( olive oil is great)
½ cup sugar
¼ red wine vinegar
1TB soy sauce
2 flavor packets from the ramen noodles.

in about 15 minutes you’ve got a bright colorful, light oriental salad. Nom.

In other news.

Hubs and I went running this morning. Huzzah! We finished 3 miles in about 40 minutes. He’s kind of not feeling like he’ll be able to run the 10 miler in August in his Vibrams so we’re going to get him a pair of regular sneaks this weekend before we run our 6-7 miler on Sunday. We’re still alternating between running/walking. Today we took about a 1.5-3 minute break once each mile. When we were running our pace was about a 10:00-11:00/mile pace which is about where I want to be. We’ll go slower on Sunday for our long run but I really want to make sure we start really fitting those in. Mainly because while we’ve been running we haven’t been running as much as I would like.

But still I’m feeling more energized. Feeling like I’m eating a lot better. Like I’m actually getting fit and losing the weight I so long to lose (healthily, ‘natch). This morning the scale was right on 150.0 – which totally meets my goal of being under 150 by the time we go to CT next week.

I won’t count it til Monday when I go to my meeting though.
